Why Our Darjeeling Green Tastes Like No Other

Not all green teas are made the same way.
Some are delicate and grassy. Others can feel flat or a little too sharp.
Our Darjeeling Green—available in loose leaf or whole leaf pyramid bags—is made using the entire tea leaf, not the crushed dust found in almost 95% of flat tea bags.
Dust-grade teas brew quickly, but in doing so, lose much of the character that whole leaf tea retains—like the natural oils, layered flavour, and soft finish that make green tea such a pleasure to drink.
With whole leaf, you get a brew that’s cleaner, more complex, and genuinely satisfying.
The Leaf Makes the Difference
Our Darjeeling Green is made from Camellia sinensis var. sinensis, a smaller-leafed variety grown at high altitudes in the cool, misty hills of Darjeeling.
By contrast, many everyday teas are made from Camellia sinensis var. assamica, a larger-leafed plant grown in the warmer, lowland plains. It’s often chosen for yield and boldness—but it tends to produce a stronger, sometimes more astringent cup.
The sinensis variety grows slower, and that’s a good thing. It allows for:

The Process: Slower, Simpler, Better
What makes green tea green isn’t the plant—it’s the process.
Unlike black tea, which is fully oxidised to deepen its flavour and darken its colour, green tea is processed to prevent oxidation, preserving the fresh, bright qualities of the leaf.
Here’s how our Darjeeling Green is made:

Hand Picking – Only the tender young leaves and buds are selected.

Withering Overnight – The leaves rest and lose moisture slowly, developing softness and aroma.

Steaming + Light Rolling – A quick steam halts oxidation; light rolling releases flavour.

Sun Drying – The final step, where leaves are gently dried under natural sunlight, locking in their character.
This traditional approach protects the leaf’s integrity and ensures a brew that’s smooth, light, and full of nuance.
How to Brew It Just Right
Green tea rewards a little care and attention. Here's how to get the most from your brew:

Use 1 teaspoon of loose leaf (or 1 pyramid bag) per cup.

Heat water to 80°C (not boiling).
Tip: Boil the kettle, let it sit for a minute, or add a splash of cold water before pouring. -
Steep for 3–5 minutes, depending on your taste.

Best served without milk to appreciate its clean flavour.
Use a teapot or infuser that gives the leaves room to unfurl. You’ll taste the difference.
